Elizabeth A. Udenta holds B. Sc. in Nutrition and Dietetics; M. Sc. in Human Nutrition from University of Nigeria, Nsukka. Her research interest is mainly on impact-orientated translational research (food crops utilization and translation of dietary recommendations into practical terms; diet formulations for metabolic studies and product development for food diversification). Her works revolve on the use of indigenous foods in the treatment of non-communicable diet-related chronic diseases with bias in type 2 diabetes. Her doctoral research focuses on reducing glycaemic index (GI) of the most commonly and widely consumed traditional starchy staples with high GI to clinically safe levels using Candida tropicalis in semi-solid state controlled fermentation. Through her doctoral research work, she has obtained a Federal Government (Nigeria) scholarship award and two international grants from FAO through a Sub-Contract between the University of Nigeria and Kings College London (FAO Project PR.18496) and Winrock International for Ford/Africa Women Leaders in Agriculture and Environment (AWLAE) partial scholarship for post-graduate studies.

Prior to joining the University of Nigeria, Nsukka, she was a Senior Nigerian Registered Nutritionist-Dietitian at the University of Nigeria Teaching Hospital, Enugu state, Nigeria. Her keen interest in diabetes education and management earned her International Diabetes Foundation (IDF) Short Training Fellowship in Diabetes Care tenable in the UK.
