Biography

Lecturer and researcher in the Department of Food Science and Technology, University of Nigeria, Nsukka. Ekene has a B.Sc in Food Science and Technology and M.Sc in Food Science and Technology with a specialisation in Cereals Technology and Food Safety from the University of Nigeria, Nsukka. His research background includes plant products technology, food product development, quality control and evaluation, food safety, and food security.
